Pan-searing is one of the fastest ways to cook sea fish, and it delivers a crisp, golden crust with a moist, tender center. With a hot pan, dry fish and a little patience, you can create a restaurant-quality dinner at home in under 15 minutes.
Ingredients You Will Need
For two servings, you need two fish fillets of about 150 to 180 grams each, such as sea bass, snapper, salmon or cod. You will also need salt, black pepper, two tablespoons of oil, one tablespoon of butter, two garlic cloves, a few sprigs of thyme or parsley and half a lemon.
Step 1: Prepare the Fish
Take the fillets out of the fridge about 15 minutes before cooking so they cook evenly. Pat both sides very dry with paper towels. Dry skin is the secret to a crisp, golden finish. Season generously with salt and pepper just before cooking.
Step 2: Heat the Pan
Use a heavy skillet, such as stainless steel or cast iron, and heat it over medium-high heat for two minutes. Add the oil and wait until it shimmers. A properly heated pan prevents the fish from sticking.
Step 3: Sear the First Side
Lay the fillets in the pan, skin-side down, pressing gently with a spatula for ten seconds to keep them flat. Cook without moving for three to five minutes, depending on thickness. You will see the flesh turn opaque as the color climbs up the sides.
Step 4: Flip and Baste
Turn the fillets once and reduce the heat to medium. Add the butter, crushed garlic and herbs. Tilt the pan and spoon the melted butter over the fish for one to two minutes. This adds rich flavor and keeps the flesh juicy.
Step 5: Check for Doneness
The fish is ready when it flakes easily with a fork and reaches about 63 degrees Celsius inside. Remove it from the pan right away, since it keeps cooking as it rests.
Step 6: Finish and Serve
Squeeze fresh lemon juice over the fillets and rest them for one minute. Serve with mashed potatoes, steamed vegetables, a simple salad or buttery rice.
Tips for Success
Avoid overcrowding the pan, as this lowers the temperature and causes steaming instead of searing. Do not move the fish while the crust forms, and use a wide spatula to protect delicate fillets.
